Acacia Wood End Grain Chopping Block
End grain is the construction serious cooks pay for. Because the blade meets the fibres end-on rather than across them, the wood parts and closes around the edge instead of being sliced through, which keeps knives sharper for longer and stops the board scarring into a network of grooves that hold moisture and colour.
Acacia is the right timber for it: dense, naturally oily, slow to absorb water, and handsome enough that the board is worth leaving out on the counter rather than hiding in a cupboard. It is heavy, and that weight is functional, holding the block still under a rocking chop without needing a cloth underneath to stop it wandering.
It is thick enough to take heavy work daily and to be resurfaced with sandpaper and oil years from now if it ever needs it. Wash by hand in warm soapy water, dry it standing on edge rather than flat, and rub in a food-safe board oil whenever the colour starts to look dry. Do not put it in a dishwasher or leave it soaking. Cared for that way an end grain block is close to a lifetime purchase, and it earns its place on the counter twice over, since the same surface that takes a cleaver in the afternoon carries bread and cheese to the table in the evening.
