The split skirt is the detail that separates a work apron from a kitchen one. Because the lower half is divided rather than closed, you can crouch, kneel, climb a step or straddle a bench without the apron pulling tight across your thighs, which matters enormously if the job involves moving rather than standing at a counter all day.

The canvas is waterproofed on the face, so water, sap, oil and cleaning solution sit on the surface long enough to shake or wipe off instead of soaking through.
